CATALOG_ADAPTER	—	—	Which catalog adapter to use: "memory" (bundled demo catalog, no setup) or "woocommerce" (Store API skeleton).
MCP_SECRET	—	yes	Unlocks the 5 sensitive back-office tools (stock, orders, sales). On stdio the presence of this variable in the server process env unlocks them; leave it unset to expose only the 6 public catalog tools.
MCP_SERVER_NAME	—	—	Override the advertised server name.
